Hi, I’m Annie, the baker behind The Mindful Lark Bakery. 🙂

I bake gluten-free, vegan cookies in my great-grandmother’s kitchen in St. Paul’s Como Park neighborhood. Every cookie is made without wheat, dairy, egg, or nuts.

I started baking because my youngest son has several severe food allergies, and I know how much work it takes to find a treat that’s both safe and delicious. (Usually the answer is one sad option at the end of the aisle.)

So once a month, I open a short ordering window for a few cookies I love: chocolate chip, soft sprinkle sugar, and the Bestie Box. You order, then pick up in Como Park or Apple Valley. You get cookies you can hand over without fear.

I hope they make your life a little sweeter and a whole lot easier.
